Thus, Međimurje meat ‘z tiblice became the 18th Croatian product whose name is registered in the EU.The Republic of Croatia has so far protected: Krk prosciutto, Extra virgin olive oil Cres, Neretva mandarin, “Ogulin sauerkraut” / “Ogulin sauerkraut”, Baranja kulen, Lika potatoes, “Istrian prosciutto” / “Istrian prosciutto”, Drniš prosciutto, Dalmatian prosciutto, “Poljički soparnik” / “Poljički zeljanik” / “Poljički uljenjak”, Zagorje turkey, Krk olive oil, Korčula olive oil, Pag lamb, Šolta olive oil, Varaždin cabbage and “Slavonski kulen” / “Slavonski kulin”.The Association for the Protection of Međimurje Indigenous Products from Čakovec initiated a national procedure for the protection of the name “Međimurje meat ‘from Tiblica” as a protected designation of origin in 2013, and today all efforts paid off and entered in the register of protected designations of origin and protected geographical indications”Međimurje meat ‘from Tiblica” is a product composed of two ingredients: “bacon” and smoked and heat-treated pieces of pork. In the production of “Međimurski mesa ‘z tiblice”, fresh pork (pork leg in a piece without bones and skin, pork back and loin, shoulder, neck, ribs and belly) and back bacon are used as raw materials. “Bacon” is a product obtained by heat treatment of back bacon under controlled conditions. Heat-treated pieces of pork are stacked in “bacon” in such a way that each piece of meat must be coated with “bacon”. By maturing for at least 45 days, the finished product “Međimurje meat ‘from Tiblica” is obtained, which is ready for consumption.Specific microclimatic conditions with cold winters and hot summers, ie high relative humidity throughout the year, and the absence of significant air currents (winds) made it impossible to store meat by drying. Since pork could not be dried and there were no refrigeration devices in which the meat could be stored, the people of Međimurje had to figure out how to easily preserve as much pork as possible without spoiling it. “Međimurje meat ‘from Tiblica” is a traditional product, of special quality and value and is an integral part of the cultural heritage of the Međimurje area. Along with other dishes of Međimurje’s traditional cuisine, this autochthonous product has not only been offered by restaurants and households, but has also been specifically packaged and has found its place at many points of sale.Related news: The production area includes the territorial area of ​​Međimurje County, which is located in the northwestern part of Croatia.
